All the bones are grindable so bone content in turkey is higher than patties made from larger animals (only a small percentage of bones in larger animals like goat, lamb, bison, and beef are grindable). Organs make up approximately 8% of the patty - this includes lungs, liver, heart, and kidneys. On average over all our proteins, patties are composed of 66% muscle meat, 7% bone, 10% organs, 7% blood, and 10% fat.
